St Patrick's Day Green Smoothie

St Patrick's Day Green Smoothie
Get in the festive mood this St Patrick's Day with this Green Smoothie Recipe!

Green smoothies are a great way to start your day. Greens contain antioxidants, which help neutralise free radicals molecules responsible for ageing! They are also packed full of calcium, magnesium, iron, potassium, phosphorous, zinc and vitamins A, C, E and K.

You can find these ingredients in your local branch of The Health Store.
1. Start with your liquid base. Coconut water is a good base as it contains natural electrolytes to help hydrate. You can also use milk, or your choice of dairy-free milk. Just avoid fruit juice as it's high in sugar. I use about a glass but you can adjust to get your desired consistency.
2. Add your greens. I use spinach or kale. I then add a spoonful of green powder such as Viridian Organic Soul Food Greens Powder to boost the nutrient content.
3. A little fruit adds sweetness, fibre and additional nutrients. An apple or a handful of frozen berries works well.
4. Throw in some healthy fats. I add an avocado, 1 tablespoon of Viridian Organic Raw Coconut Oil and 1 tablespoon of chia seeds. You could also add nut butters or ground seeds like flaxseeds.
Blend it all together. You may prefer to blend rather than juice vegetables and fruit as it preserves the fibre, which supports digestion. A super-healthy, anti-ageing, immune boosting start to your day.

Buckwheat Pancake Recipe

Buckwheat Pancake Recipe
This lovely recipe serves up to 4

The Ingredients...
* Buckwheat flour (160g)
* Plain flour (65g)
* Eggs x2
* Milk (600ml)
* Salt ½ tsp
* Roasted buckwheat groats (45g) finely ground in a coffee grinder
* Melted butter about 2 tbsp

Step 1
Whisk together the flours, eggs, milk, salt and groats. Put the batter in the fridge overnight.

Step 2
Heat a pan over a medium heat. With a paper towel, rub a little butter around the pan, then ladle in about 25g of batter.

Step 3
Let the galette brown on one side, then flip it over. Remove the galette from the pan and set it aside.

Step 4
To fill the galettes - lay each one top-side down, place a slice of ham on top, sprinkle with cheese, and fold.

Put the galettes on a baking sheet and drizzle with melted butter. Pop in a preheated oven (200C/gas mark 5) until crisp. Serve with the salad.

UDOS CHOICE Cashew-Blueberry Smoothie

Serves 4 to 6

  • 300g Cashew Nuts
  • 150g unsweetened shredded dried Coconut
  • 960ml water
  • 12 capsules Udo’s Choice® Probiotics
  • 150g blueberries (or any combination of berries of your choice)
  • 60ml Udo’s Choice® Ultimate Oil

Soak the cashews and coconut in the water for 8 to 12 hours. Pour into a blender and process until smooth. With the motor running, open the capsules and add the probiotics, discarding the capsules. The blending action will help thicken the mixture.

Strain the mixture through a medium-fine mesh sieve, pressing down on the solids to express as much liquid as possible into a clean glass container. Keep in a warm place for 12 hours. The mixture should have a slightly sour taste, similar to yoghurt.

Return mixture to the blender, add the blueberries (or other berries) and oil and process until smooth. Cover any remaining smoothie and, stored in the fridge, you can use it for up to three days.

The addition of Probiotics, beneficial bacteria, is a wonderful way to boost your immune system, aid digestion and absorb more nutrients from your food.
